Loretta
Kinkenon is a cooking enthusiast who has been experimenting in the kitchen much
of her life. She grew up in Buffalo, New York and began cooking with her mom
as a young girl and was encouraged to create and play in the kitchen. Many years
later, Loretta found she loved cooking, creating and making subtle changes to
recipes to bring out different flavors in the food. Loretta lead the usual busy
life, working full time as a registered nurse and raising a son, so her cooking
style evolved to include healthy dishes that could be made quickly. Loretta
and her husband, Matt were married in 2001 after she moved to Las Vegas, Nevada.
Matt
is a Software Engineer who has over 20 years experience in the field---he was
also born with cerebral palsy. In late 2002, Matt and Loretta realized others
could benefit from their knowledge of living a great life with a disability.
This awareness was the genesis of many ideas including this book. The cookbook
contains many affirmations and suggestions (called Practices) for improving
the lives of not just those living with a disability, but anyone. A CD of "Ten
